Foolproof Pancake Day recipe from Ghillie James

We are excited to have received an easy to make pancake recipe, that my 4 and 2 year old did entirely by themselves (well apart from the cooking bit that is!)
The oh so talented Ghillie James (Previously Food Editor at Sainsbury's Magazine) and part of the team behind Lettuce Publishing has given us this fabulous foolproof Pancake recipe:
You will need:
125g plain flour
1 large egg
1/2 tsp mild oil
Pinch of salt
300ml whole milk
About 25g butter, melted
Makes 6
Method:
Put the flour, egg, oil, salt and half the milk into a bowl or blender and whisk or blend till smooth. Add most of the remaining milk and blend again. The mixture should be the consistency of single cream.
Use a brush to coat the base of a frying pan lightly with butter then heat. Add a ladleful of batter and tip the pan to coat thinly. When the underside is light brown use a palette knife to flip the pancake over (or toss it!!). Cook on the other side then slip onto a plate. Repeat till all the mixture is used up.
Fillings:
Classic lemon and sugar
Maple and sliced banana
Chocolate spread, chopped hazelnut and whipped cream
Ham and grated cheese
